Cream of Celery Soup - Vegan Style

As you all may know, it's a new year and there's suppose to be a new me BUT I like the old me haha. This year I'll be focusing more on eating out less and really putting the lifestyle I chose as a priority. I alway make my famous chicken & dumplings soup for my family but nothing in that is vegan. Today I decided to try something similar by make a Cream of Celery Soup with Walnuts! Yes, walnuts...I needed the crunch haha. I have to admit, it turned out pretty darn good so here's the recipe for those who may need a little guidance on going vegan. 

What You Need:

1 Bundle of Celery

1 Onion or 1 Cup of Seasoning Blend

1 L of Vegetable Broth (4 Cups)

1/2 Cup of Flour (I used oat flour)

1 tbl Olive Oil

1 Cup of Water

1/2 Cup of Walnuts

Spices: Sea Salt, Pepper, Garlic Powder, Onion Powder, & Oregano 

How to Cook:

Step 1:

Dice Six Celery Stalks & Onion 

Step 2: 

Salute Celery & Onion's in pot for 10 minutes with 1 tbl spoon of Olive Oil

Step 3:

Bring Heat to a Boil

Add: Vegetable Broth

Water

Flour

Walnuts

***Season as you wish, I added about 1/4 tsp of all the seasonings above and sea salt as needed***

Let cook for 25- 30 minutes or until celery is cooked down

 

Voila, and you're done! One pot clean up <3
